How To Make Lemon Cake
Ingredients
6 large egg yolks
1 cup Milk
2 1/2 tsp Lemon extract
3 cups Cake Flour
1 Tbs plus 1tsp Baking powder
1/2 tsp salt
11/2 cups sugar
3/4 cup unsalted Butter – room temperature
Method
- Preheat oven to 350 F / 180 C. Prepare 2 – 9″ pans.
- In a bowl mix well egg yolks, extract and milk .
- Sift together flour, baking powder and salt.
- Cream the butter in a separate bowl until fluffy.
- Scrape down bowl and add sugar.
- Beat until butter and sugar are fluffy. Scrape down bowl.
- Add flour mixture (3 parts) and milk mixture (2 parts) alternately.
- With each addition of milk and flour mixture, scrape down bowl.
- Mix batter on medium for 30 seconds after all is added.
- Remove from mixer and make sure all is combined.
- Divide batter into both pans and bake 25-35 minutes.
- Don’t open oven door until 25 minutes
- Let cool and turn out onto rack. Cool cakes completely .
